Rich Mushroom Soup

Ingredients

10 Button Mushrooms, cleaned, washed and diced
5 cups Water
1 clove Garlic, finely chopped
1 small piece Ginger, finely chopped
1 tablespoon Onion, finely chopped
1 tablespoon Spring Onion, Finely chopped
2 tasblespoons Coriander Leaves, Finely chopped
1 cube Vegetable bouillon, dissolved in water
1 teaspoon Cumin/Jeera Powder
1 teaspoon Corn Flour dissolved in 2 teaspoons milk or water
1 pinch Ajinamoto - a pinch
Pepper, to taste
Salt , to taste
1 tablespoon Butter

Preparation

Heat butter in a sauce pan. Add garlic and ginger and saute for 1 minute.

Add onion and spring onions. saute for 2 minutes.

Add mushrooms and saute for 5 minutes.

Add water and bring it to boil. Cover with a lid and allow mushrooms to cook.

Once mushrooms are half done, add bouillon cube and salt, and stir it continuously for 2 minutes.

Now add corn starch dissolved in water, and stir continously till it comes to soup consistency.

Finally add a pinch of Ajinamoto and pepper for taste. Garnish with Coriander leaves.
