Yield: 6 servings

pounds New small red, yellow or small Yukon Gold

potatoes

5

pounds Kosher salt

Step 1

Preheat the oven to 450 degrees.

Step 2

Pour a layer of salt 1-inch thick in the bottom of a 9-quart Dutch oven. Bury some potatoes in salt. Pour in more salt and continue to bury more potatoes, finishing with a layer of salt.

Step 3

Cover the pot and bake in the middle shelf of the oven for 1 hour and 15 minutes.

Step 4

Pour the contents of the Dutch oven into a very large bowl, and dig out the potatoes. If the potatoes are encrusted with salt, brush it off.

Step 5

This recipe yields 6 servings.
