Artichokes Parmesan

This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

1 package frozen artichoke hearts, quartered
1 large shallot, minced
1 tablespoon olive oil
1/2 medium lemon, juiced
4 tablespoons Parmesan cheese, grated
salt and pepper

Preparation

Heat non-stick skillet over medium heat with olive oil. Add shallot and saute for 5 minutes until tender.

Add garlic and artichokes and cook another 5 minutes until tender.

Add lemon juice and salt and pepper to taste.

Top with parmesan cheese.

What a nice change from the usual broccoli side dish. Caramelized shallot, garlic and Parmesan cheese just made my favorite artichoke even better.
