Nutty Quinoa and Artichoke Hearts
3/4 cup quinoa
1 1/2 cups water
10 ounces artichoke hearts, frozen and chopped into bite sized pieces
1/2 medium red onion, finely chopped
2 mediums tomato , seeded and chopped
1 clove garlic, minced
1 teaspoon oregano, dried
1 tablespoon balsamic vinegar
1/4 cup parsley, minced
1/2 cup feta cheese, crumbled
1/2 large lemon, juiced
1 tablespoon olive oil
Allow to cool to room temperature and add feta.
If your goal is to improve the nutrition in your diet, maybe lose some weight, you really need to check out quinoa. This grain is a powerhouse of nutrition. I love it’s nutty texture, and pearly look in salads and side dishes.
