I was given this recipe by Chef Amy Vanclef , of La Pastaia in San Jose, Ca.
Her dessert philosophy is "make things interesting, simple not fancy, and good!"

Yield: up to four people

Ingredients

6

egg whites

pinch of salt

2 ¼

cups granulated sugar

2

teaspoons distilled white vinegar

1

teaspoon vanilla extract

Preparation

Step 1

Combine egg whites with salt and beat until firm, shiny peaks form.

Step 2

Gradually add 1-1/4 cups of the sugar and continue to beat until stiff and glossy.

Step 3

Fold in the vinegar, vanilla and 1/2 cup of the remaining sugar.

Step 4

Mist some water on parchment paper that is on a baking pan, and spoon the

Meringue mixture in the desired shape.

Step 6

Bake until the outside is crisp and just set in the center, about 1-1/2 hours.

Step 7

Set aside until cool.

Step 8

Scoop goat cheese gelato in the center, and spoon strawberries marinated in balsamic vinegar and sugar, over top.

Step 9

Serve and enjoy!!
