Lion’s Head Meatball

Ingredients

1 pound ground pork
1/2 pound shrimp, cooked, chopped into small pieces
1/2 bunch green onions, finely chopped
2 tablespoons ginger, finely chopped
1/4 cup mushroom, chopped
1/2 head lettuce, chopped into large pieces
1 tablespoon soy
1 tablespoon rice wine
1 tablespoon cornstarch
3 teaspoons veg oil
1 teaspoon salt
1 1/2 cups chicken broth

Preparation

Combine pork, scallion, ginger, mushroom, soy, sugar, wine, cornstarch

Shape into 8 large balls

In casserole or Dutch oven, heat oil and add lettuce. Season with salt and saute until wilted

Add meatballs to brown

Add chicken broth and bring to boil

Reduce heat and simmer 30-35 minutes

About

These were made with ground pork and shrimp (the word sounds like “ha, ha”, symbolizing laughter, happiness). Of course, I added just a bit of sea moss and some mushrooms. These mushrooms are the dried Chinese black mushrooms, and they represent fortune and are often eaten during this time of year when many go vegetarian (ah-hem, not me).
