Apricot Relish

Ingredients

2 cups onion, diced
2 teaspoons salt
5 cloves
2 cups vinegar, white
cup sugar (caster)
2 teaspoons tumeric
teaspoon curry powder
2 teaspoons flour, plain

Preparation

Washed apricots and remove stones.

Place all ingredients except flour in a pot, bring to the boil, stirring,reduce heat and simmer 45 minutes. Stir occasionally.

Blend flour with a little water and stir into mixture. Bring back to the boil and simmer 5 more minutes.

Ladle into hot jars and seal.

Serve with chicken, pork or ham.

Keeps for 3-4 months.

Ensure storage jars are well sterilised.
