Spicy Mahi Mahi Burrito With Crunchy Green Cabbage Slaw

Ingredients

1 pound Mahi Mahi, sliced into 1″ pieces
2 tablespoons olive oil
1 large lime, juiced
1/4 cup cilantro, chopped
1/4 teaspoon salt
1 tablespoon chili powder
2 tablespoons sugar
2 tablespoons cilantro, chopped
1 teaspoon celery seed
1 tablespoon olive oil
Remaining Ingredients
4 tablespoons light sour cream

Preparation

Combine olive oil, lime, chili powder, 1/4 cup cilantro, cayenne and salt in shallow dish. Coat Mahi Mahi with marinade and let sit for 15 minutes.

Slaw

Combine olive oil vinegar, sugar, cilantro, cayenne pepper and salt in a bowl. Toss with cabbage and let sit for 15 minutes.

Using a stove top grill pan, grill Mahi Mahi until done.

Warm tortillas and top with slaw, Mahi Mahi, pico de gallo and cheese.

You have to give this recipe a try. It’s a bit high in calories, but not compared to the typical burrito. Using whole wheat – low fat tortillas, light cheese and lots of fresh ingredients, you can’t go wrong.
