cloves minced garlic

tsp. salt; optional

tbsp. olive oil

c. plain yogurt

1

cucumber, peeled, seeded and chopped

Juice and rind, grated of ½ lemon

c. cold water

c. currants

c. chopped mint

Step 1

Mix garlic, salt, and olive oil. Beat mixture into 2 cups yogurt until smooth. Blend cucumbers, juice and rind of lemon, and cold water. Add currants and mint. Chill; garnish with mint springs.
