Recipe: Vegan Bean & Potato Soup edit

Yield: 3 meals for 2 hearty eaters.

edit Ingredients

2

cups dry beans (soaked and drained), or 2 cans of beans

red potatoes (depending on size and how much you like potatoes)

2

carrots

2

stalks of celery

½

cup chopped onion

1

teaspoon minced garlic

1

can diced tomatoes

½

cup pearled barley (optional)

4

cups vegetable broth

4

cups water

2

teaspoons vegetable oil

2

bay leaves

½

teaspoon basil

½

teaspoon oregano

½

teaspoon black pepper

½

teaspoon thyme

Step 1

Chop vegetables.

Step 2

Saute onions and garlic in vegetable oil.

Step 3

Add all ingredients other ingredients.

Step 4

Simmer for app. 1 hour.
