Step 1 |
Combine cornstarch and water in a medium saucepan. Stir until smooth and add pineapple. Cook over medium heat until mixture boils and thickens, stirring well. Remove from heat, stir in lemon juice, and beaten egg yolks. |
Step 2 |
Add cheese. Return to heat and continue cooking and stirring until mixture bubbles. Remove from heat, add Equal, and beat with mixer to blend in cheese. Set aside to cool. Beat egg whites until soft peaks form. Fold into cooled pineapple mixture. Spoon into dessert dishes and refrigerate until served. |
