Yield: 4 servings

[edit] Ingredients

pound Orzo, cooked

½

cup Sundried tomatoes in oil

½

cup Greek olives, sliced

½

cup Artichoke hears, quartered

1

small Red onion, mince

1

Red pepper, roast, 1" strips

2

teaspoons Thyme leaves, chopped

2

tablespoons Balsamic vinegar

4

tablespoons Extra-virgin olive oil

1

tablespoon Italian parsley, chopped

Salt and pepper

1

pound Shrimp, cooked, optional

1

Lemon, juiced

Step 1

Put cooked orzo in a bowl with the other ingredients while still warm.

Step 2

Stir well to combine.
