Herbed Millet and Tofu Casserole

Ingredients

1 cup raw millet
2 cups water
1 pound firm tofu (Mori-Nu Lite)
2 cups chopped spinach
1 small onion minced
2 cloves garlic minced
1/2 teaspoon dried thyme
1/2 teaspoon fresh basil
1/2 teaspoon fresh tarragon
1 tablespoon fresh parsley

Preparation

Saute minced onion and garlic in a saucepan sprayed lightly with vegetable oil. Add herbs and then millet. Saute briefly.

Add water and bring to a simmer. Simmer 25 minutes.

Add tofu and spinach and simmer 5 more minutes.
