Boo-Berry Muffins

Ingredients

1 1/4 cups old fashion oats
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 egg
teaspoon (Optional: 1 sugar crystals)

Preparation

Combine oats, flour, sugar, baking powder, salt and cinnamon.

Mix in yogurt, egg, and oil; mix just until dry ingredients are moistened.

Fold in blueberries.

Fill greased or paper lined muffin cups 2/3 full with batter.

Optional: Sprinkle with sugar.)

Bake at 425 degrees F (220 degrees C) for 20 to 25 minutes.

Cool on rack.

how much brown sugar? The amount is missing

I love having muffins around for breakfast or snacks. I try to make muffins healthier so with these muffins half the flour is replaced with old fashion oats. Feel free to substitute the blueberries for chopped up strawberries or apples or raspberries or even raisins. These are super easy!
