Vinaigrette

Ingredients

1 clove garlic
1 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon dry mustard
1 teaspoon Dijon mustard
2 tablespoons best quality olive oil
Juice of 1 lemon
2 tablespoons tarragon vinegar
4 tablespoons vegetable oil

Preparation

Combine vinaigrette ingredients in a jar and shake well. prepare in advance to promote an exchange of flavors. Remove garlic before using.

NOTE: I always crush the garlic and I usually double the recipe because this keeps indefinitely in the refrigerator.
