Ingredients

zucchini flowers
1
small recipe of your
favorite pancake
batter,
prepared with 1-2 tablespoons grat
3 tablespoons
olive oil
Preparation

Wash
the zucchini flowers, pull out the centers, and flatten.

Heat
oil in a shallow pan. Carefully dip each flower into the pancake
mix
and place in the pan.

Allow to cook a minute or two, until lightly
brown
on the bottom, then
flip.

When
brown
on both sides, remove from the pan onto a paper-towel-covered
plate
(to
soak
up some of the oil).
5
Serve
immediately (perhaps with a little salt), and enjoy.
