Sticky rice is insanely easy to cook. Besides buying the sweet rice, you will have to invest in a Thai bamboo steamer basket and accompanying pot. They are pretty inexpensive, you can purchase buy both for under $20 at most Thai/Lao stores.

Ingredients

2 cups sticky rice (also called sweet, or glutinous rice)

Preparation

In a large bowl, soak the rice in water for at least three hours (overnight if you can plan that far in advance).

When the rice is ready to cook, fill the pot with a couple inches of water and bring to a boil over high heat.

Pour the rice into the bamboo basket over a sink and let the soaking water drain.

Then, insert the basket of sticky rice into the pot and cover it with a lid.

About every 10 minutes, remove the basket from the pot and flip the rice over by shaking the basket so that it steams evenly.

In about 20 minutes the sticky rice is done.

If it's ready, the rice will be translucent, firm, and chewy.

Serve immediately.

Sticky rice can be refrigerated but it's best eaten fresh.
