cup oil

2

pounds boneless pork shoulder, cut into 1 in. cubes

3

cups chopped tomatoes 4 medium( I used canned)

1

cup sliced carrots

1

cup sliced celery

½

cup chopped onion

1

tablespoon paprika

1 ¾

teaspoons salt

¼

teaspoon black pepper or to taste

1

pound mushrooms

1

cup sour cream

1

tablespoon all purpose flour

Step 1

In a large saucepan heat oil until hot. Add pork; brown on all sides. Drain and discard fat. Add tomatoes, carrots celery, onion, paprika, salt and pepper; simmer coveredfor 30 minutes, stirring occasionally. Rinse, pat dry and slice mushrooms Yield: 5 1/2 cups).Add mushrooms to saucepan; continue to simmer, covered, for 30 minutes, stirring occasionally. Combine sour cream and flour; stir into stew. Cook until thickened, about 5 minutes stirring constantly. Serve over buttered noodles, if desired. 6 cups.
