small mackerel whiting trout or red or grey mullet cleaned |

rosemary sprigs |

tablespoons olive oil |

tablespoons lemon juice |

small clove garlic crushed (optional) |
lemon wedges to garnish |

Step 1 |
Make 3 cuts across each side of the fish. Sprinkle with salt and pepper. Place the herbs in a shallow dish and lay the fish on top. |
Step 2 |
Mix together the oil lemon juice and garlic if using and pour over the fish. |

Transfer the fish to the grill rack. |
Step 5 |
Place about 10cm under a preheated moderate grill and cook for 5 to 6 minutes on each side until cooked through and golden. |
