Yield: 4 servings

[edit] Ingredients

small mackerel whiting trout or red or grey mullet cleaned

to taste salt and pepper

2

rosemary sprigs

4

tablespoons olive oil

1 ½

tablespoons lemon juice

1

small clove garlic crushed (optional)

lemon wedges to garnish

or bay leaves

Step 1

Make 3 cuts across each side of the fish. Sprinkle with salt and pepper. Place the herbs in a shallow dish and lay the fish on top.

Step 2

Mix together the oil lemon juice and garlic if using and pour over the fish.

Step 3

Cover and chill for 3 to 4 hours turning several times.

Step 4

Transfer the fish to the grill rack.

Step 5

Place about 10cm under a preheated moderate grill and cook for 5 to 6 minutes on each side until cooked through and golden.

Step 6

Serve immediately garnished with lemon wedges.
