Cyclops Meatballs With Scary Green Hair

Ingredients

For the cyclops:
1 pound ground turkey (give or take a few ounces depending on package weight)
1 cup sharp cheddar cheese, grated
1/2 apple, cored and seeded, then grated (peel on)
1/4 onion, finely chopped
1/2 cup bread crumbs
Salt and pepper
6 Pimento-stuffed green olives
Ketchup
For monster hair:
Spinach spaghetti
1-2 T Butter
3/4 cup Parmesan cheese, grated

Preparation

Preheat oven to 375 degrees F.

Mix the ground turkey with the grated cheese, grated apple, diced onion, breadcrumbs, salt and pepper in a large bowl.

Form into 4-6 evenly-sized balls. Gently press each ball to flatten the bottoms (this will help keep them from falling over).

Place on a non-stick cookie sheet and bake for 15 minutes or until a thermometer inserted in the center reads 165 degrees F.

5 minutes before meatballs are done, prepare the spaghetti.

Bring salted water to a boil in a large stockpot. Add spaghetti and cook until done.

Drain and put in a medium bowl.

Toss spaghetti with butter and Parmesan cheese.

Remove meatballs from oven and place on serving dish.

Pipe a mouth on each meatball with ketchup. (TIP: to make a piping bag squirt some ketchup into a plastic sandwich bag and snip the tip off one corner)

Place spaghetti on top of each meatball for the monsters' hair.

Serve with extra ketchup for dipping.

These healthy meatballs are a perfect dinner for kids, especially on Halloween! Pop half an olive in the center to make a cyclops, and squiggle some ketchup for a mouth. Spinach spaghetti tossed with Parmesan cheese makes for creepy crazy hair!
