Strawberry Rhubarb Jam

Ingredients

4 cups strawberries, crushed
2 1/2 cups chopped rhubarb
1/4 cup lemon juice
1 package pectin powder
6 cups sugar

Preparation

Combine strawberries, rhubarb, lemon juice and pectin powder in a large saucepan.

Bring mixture to a boil over medium high heat

Add sugar, stirring to dissolve

Return mixture to a full, rolling boil and boil hard for 1 minute

Remove the saucepan from heat

Skim any foam from the surface

Ladle the boiling hot jam into pint jars, leaving 1/4 inch headspace

Place lid and ring onto jars

Process in hot water bath for 20 minutes

 



About

Strawberries and rhubarb are a traditional pairing. The tart rhubarb makes the berries taste that much sweeter.
