Patzaria (Beets & Walnuts In Yogurt Sauce)

Preparation

Boil beets until tender; drain well.

Peel and cut into medium julienne.

Transfer to a bowl and stir in the vinegar.

Blend yogurt, oil and garlic in another bowl.

Season with salt. Stir into beets. (Can be prepared 1 day ahead up to this point, covered, and refrigerated.)

Fold in the ½ cup of walnuts.

Cover and refrigerate 30 minutes.

Just before serving, sprinkle with additional finely chopped walnuts.
