Ingredients

1 pound semolina
1 pound zucchini
8 tablespoons olive oil
2 cloves garlic
5 eggs (5 to 6)

Preparation

Chop zucchini into small pieces.

Combine 4 tablespoons olive oil, 2 cloves mashed garlic and chopped shallots in saucepan and brown lightly. Add zucchini and Italian parsley to sizzling oil, season with salt and pepper to taste. Simmer for 20 minutes over reduced heat.

Puree zucchini mixture.

Fold by hand zucchini mixture, flour, semolina, eggs, and remaining olive oil.

Roll through pasta machine and make into any shape.
