Stuffed Filet Mignon

Ingredients

3 pounds trimmed filet
1/4 cup butter, melt and add:
1 med. onion, chopped
1/2 cup celery, diced
4 ounces mushrooms
2 cups soft bread crumbs
1 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon basil
1/8 teaspoon parsley

Preparation

Slice meat 3/4 of the way down. Top with strips of bacon. Bake for 1 hour at 350 degrees.
