Zucchini Bake

Ingredients

3 cups thinly sliced zucchini
1 cup buttermilk biscuit baking mix
1/2 cup oil
1/2 cup chopped onions
1/2 cup chopped green pepper
2 tablespoons chopped parsley
1/2 teaspoon salt
1/2 teaspoon oregano
1 clove minced garlic

Preparation

Combine zucchini, onions, pepper, Parmesan cheese, salt, garlic, oregano and black pepper in a large bowl and mix until well blended; set aside. In blender container, combine biscuit baking mix, oil and eggs. Cover and blend on HIGH for 1-2 minutes or until ingredients are well mixed. Add to zucchini mixture and stir until ingredients are evenly distributed.

Pour into a greased 13x9x2 inch pan. Bake at 350 degrees for 25-35 minutes. Cut into squares to serve.
