ounces chicken breast |

medium portabello mushrooms |

sweet grape tomatoes |

tablespoons croutons |

tablespoons bacon bits |

tablespoons parmesan cheese |

cups chopped romaine lettuce |

For the Dressing |
3 |
tablespoons olive oil |
1 |
tablespoon lemon juice |
2 |
clv garlic roasted and chopped |

Step 1 |
To Assemble:Grill or barbecue chicken breast - 5 minutes per side. |
Step 2 |
Set aside to cool. |
Step 3 |
Gently wash portabello mushrooms and cut into bite size pieces. |
Step 4 |
Thoroughly wash grape tomatoes. |
Step 5 |
Roast garlic cloves in hot oven - 350 for 10 minutes and allow to cool. |

Step 7 |
Saute mushrooms for approximately 2 minutes. |
Step 8 |
Add tomatoes and saute for one more minute. |
Step 9 |
Whisk all dressing ingredients together until smooth texture is achieved. |
Step 10 |
In medium size mixing bowl place romaine lettuce and add dressing, croutons and bacon bits. |
Step 11 |
Mix thoroughly. |
Step 12 |

Step 13 |
Top with sliced chicken breast, sauteed mushrooms, tomatoes and lemon wedges. |
Step 14 |
Finish with freshly grated Parmesan cheese. |
