Whole-Wheat Pancakes

Ingredients

cup crushed low-sugar bran cereal
2 teaspoons baking soda
cup evaporated skim milk
2 eggs beaten
1 tablespoon brown sugar
1 tablespoon canola oil
2 teaspoons vanilla
Nonstick cooking spray as needed

Preparation

Combine all ingredients and mix until blended. Drop batter, 1/4 cup at a time, onto a hot griddle sprayed with nonstick cooking spray. Cook until brown on both sides, turning once, about 5 to 6 minutes. Serve with jam or fruit if desired.
