Chocolate Chip Cookie Ice Cream Sandwich

Ingredients

2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¾ cup unsalted butter, melted
3/4 cup packed brown sugar
½ cup white sugar
1 tablespoon vanilla extract
1 egg (room temperature)
1 egg yolk (room temperature)
1.5 cups semisweet chocolate chips

Preheat the oven to 325 degrees F (165 degrees C)

Line a cookie sheet with parchment paper.

Take out the eggs so that when its time to use them, they will be at room temperature.

Get out two bowls and lets begin baking. Sift together the flour, baking soda and salt. Set aside.

In a medium bowl, cream together the melted butter, brown sugar and white sugar. Once well blended, beat in vanilla, egg and egg yolk until creamy. Mix in the dry ingredients until blended. Stir in the chocolate chips using a wooden spoon or your hands.

Chill the dough for about an hour before baking.

Get about 1/4 cup cookie dough, roll it and place it on the cookie sheet. Make sure they are about 3 inches apart.

Bake for 15-17 minutes, until lightly brown around the edges. Let it sit for a couple minutes before transferring it to a cooling rack. The cookie might seem like it might need more time, but once it cools, it will be nice and chewy!

Once cooled, give it about 30 minutes. Add your favorite ice-cream on one half and top it off with another cookie. Enjoy!
