Stuffed Bitter Melon
Wash bitter melon and cut both ends. Slice in half lengthwise, then scrape off as much of the bitter lining as possible.
Cut into 1 1/2 inch lengths and remove seeds. Scrape off as much of the bitter white lining as possible. Mix other ingredients well and stuff into bitter melons. Place melons in a bowl and steam until cooked, about 45 minutes to an hour.
