tablespoons Butter

2

tablespoons Olive oil

2 ½

pounds Red potatoes, sliced

3

tablespoons Chopped fresh thyme

1

tablespoon Minced garlic

1 ½

cups Chicken broth

edit Preparation

Step 1

Melt butter with olive oil in large heavy skillet. Add potatoes, thyme and garlic. Sprinkle with salt and pepper. Add broth and bring to a boil.

Step 2

Reduce heat, cover and simmer until tender, stirring occasionally. Add more broth, if necessary.

Step 3

Yield: 6 servings.
