carrots, scraped

inch and cut quarters lengthwise

purple or golden beets, thickly sliced

lrg parsnip, thinly sliced

tablespoons vegetable broth or white wine

1

tablespoon butter or margarine

2

tablespoons honey or maple syrup

1

teaspoon anise seed

½

teaspoon salt

½

teaspoon white pepper

Step 1

MAKES 4 SERVINGS. LACTO/VEGAN

Step 2

Anise is a slightly licorice-flavored seed: here it subtly enhances the natural sweetness of root vegetables.

Step 3

Place all ingredients in small saucepan. Cover; steam until roots are tender when pierced with knife, about 15 minutes.

Step 4

Makes 4 servings.
