pound lean beef steak, thinly sliced

1

sweet red pepper, seeded and cut into ¾ inch squares

1

sweet green pepper, seeded and cut into ¾ inch squares

1

tomato, cut in wedges

4

tablespoons oil

2

garlic cloves, minced

1

onion, chopped

3

tablespoons soy sauce

1

teaspoon corn starch

1

tablespoon oil

Step 1

Wok cook:

Marinate the beef in the garlic, onion, soy sauce, corn starch and oil for 15 to 30 minutes.

Step 3

Heat the wok and add 2 tablespoons oil. When it begins to smoke add the pepper and the tomatoes. Stir fry until they are slightly softened and remove them from the wok.

Step 4

Add the remaining oil. Drain the beef reserving the marinade. Stir fry the beef in the wok until it begins to brown.

Step 5

Return the peppers and tomato to the wok. Add the marinade and cook for 1 minute. Serve immediately. Serves 6.
