(rice, pasta, quinoa or cracked wheat)

cup Diced crunchy vegetable

(celery, fennel, carrots or bell pepper)

cup Additional vegetable parboiled if need be

(broccoli, green beans, corn)

¼

cup Finely-diced red onion

(or sliced scallions or chives)

½

cup Packed chopped fresh herbs

cup Dressing of choice more or less

Salt to taste

Freshly-ground black pepper to taste

Step 1

* Note: Bean Cooking Times for 1 cup dried, then soaked Anasazi beans 1 1/2 to 2 hoursAduki beans 1 hourBlack runner beans 1 1/2 to 2 hoursChickpeas 1 1/2 to 2 hoursChristmas limas 1 to 1 1/2 hoursPinto beans 1 1/2 to 2 hoursScarlet runner beans 1 1/2 to 2 hoursSoybeans 2 to 3 hours

Step 2

Mix the ingredients together and season with salt and pepper.
