Sweet Potato and Orange Cups (from “The Original Tennessee Homecoming Cookbook,” p. 221)
Ingredients
3 cups sweet potatoes, cooked and mashed
1 cup sugar
½ teaspoon salt
2 eggs
¼ cup butter
½ cup milk
1 teaspoon vanilla
Orange half shells
Topping:
1 cup brown sugar
1/3 cup all-purpose flour
1 cup nuts, chopped
¼ cup butter
Preparation

Assemble all ingredients and utensils.

Mix all ingredients together and pour into orange halves which have the pulp removed.

Cover with topping.

Mix thoroughly and sprinkle over potato mixture in orange cups.

Bake in a 350 degree oven for 35 minutes.

The appeal of this recipe is that it can throw something of a "curve ball" to your traditional Thanksgiving fare. It's a very simple recipe to make that offers great diversity.
