cup Fresh lemon juice |

cup Pure maple syrup |

cup Corn oil |

medium Shallots, thinly sliced |

lrg Garlic cloves, thinly sliced |

Fresh thyme sprigs |

Imported bay leaves |

teaspoons Finely grated lemon zest |

teaspoon Freshly ground black pepper |

10-lb turkey |

Step 1 |
Combine all the ingredients except the turkey in a sturdy 2 gallon plastic bag. |
Step 2 |
Add the turkey to the bag, squeeze out as much air as possible and seal the bag. |
Step 3 |
Distribute the marinade evenly over and inside the turkey. |
Step 4 |
Set the turkey, breast side down, in a bowl in the rfrigerator and marinate for 24 hours, turning occasionally. |
Step 5 |
Wipe the shallots and garlic from the turkey before cooking and pat dry. |
Step 6 |
Roast as normal. Strained marinade can be used in the gravy if desired. |
