[edit] Ingredients

zucchini (medium size), cut into 1/2 inch thick slices

¼

cup rice vinegar

3

tablespoons olive oil

¼

cup fresh dill sprigs, chopped

[edit] Preparation

Step 1

Preheat grill to medium high. Toss zucchini slices with a little oil. Place on grill turning to make grill marks. Leave on grill for about 5 minutes turning once.

Step 2

In a stainless steel bowl mix together rice vinegar, olive oil and chopped fresh dill sprigs.

Step 3

Place warm zucchini in marinade and allow to cool.

Step 4

Refrigerate until ready to serve.
