Æbleskiver (Danish meaning ''apple slices'' (singular: ''æbleskive'')) are traditional Danish pancakes in a distinctive shape of a sphere. Somewhat similar in texture to American pancakes crossed with a popover, Æbleskiver are solid like a pancake but light and fluffy like a popover. The English language spelling is usually aebleskiver or ebleskiver. In the United States, the most famous version of the aebelskiver is a commercial repackaging of the pan, called Pancake Puffs, which is treated as a new invention, with no mention of its heritage included.

cup frothy starter

eggs

tablespoons oil or melted butter

1

tablespoon sugar

1

cup buttermilk

½

teaspoon cardamom

all-purpose flour, as needed to make thick pancake-like batter

teaspoon baking powder

1

teaspoon baking soda

Step 1

Mix all ingredients except baking powder and soda in a large bowl and let sit for several hours until very bubbly. Stir in baking powder and soda at last minute. Brush each section of the heated ableskiver pan with ample butter. Fill the molds 3/4 full with batter and cook over medium flame until batter swells and a crust starts to form. Use a wooden skewer or knitting needle to pierce the crust and flip each pancake, letting the batter spill into the mold to form the sphere. Continue cooking until done.

Ableskiver are spherical Dutch pancakes; it may take a little practice to develop your flipping technique. Serve with a dusting of powdered sugar and berry jam on the side.
