Lemon Chicken with Potatoes

Ingredients

- A whole chicken
- 8 to 10 potatoes, cut into wedges
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tbsp oregano
- 1/2 tsp pepper
- juice of 1 lemon

Preparation

Place chicken and the potatoes into a deep roasting pan

In a mixing bowl whisk the olive oil and the lemon juice.

Pour over the chicken and the potatoes.

Place the squeezed lemon halves in the chicken's body cavity.

Rub salt and oregano over the potatoes and the chicken

Add 1 cup of water into pan, so the potatoes are almost covered.

Top with some fresh pepper.

Place the pan, covered, in a preheated oven for 1 hour and 15 min. Bake at 400F ( 180C ).

Continue cooking, uncovered, for 10 more min, until chicken and potatoes are tender and golden.

Serve warm, with Feta cheese.
