Yield: 4 servings

½

pound shiitake mushrooms washed, sliced

2

tablespoons vegetable oil

3

garlic cloves minced

1

tablespoon grated fresh ginger

1

head bok choy chopped 1" pieces

¼

cup chopped red bell peppers

1

bn green onions, green and white parts chopped

1

tablespoon dark sesame oil

2

tablespoons sweet sherry

2

tablespoons soy sauce

Salt to taste

8

ounces Oriental noodles - (to 12 oz) cooked

2

tablespoons sesame seeds for garnish

Step 1

In a large skillet, saute the mushrooms in the oil for 3 to 5 minutes. Add the garlic, ginger, bok choy, peppers, green onions, sesame oil, sherry, soy sauce, and salt. Stir-fry until the bok choy and peppers are tender, about 5 to 8 minutes. Add the noodles and mix.

Step 2

Serve on a platter and sprinkle the top with the sesame seeds.

Step 3

This recipe yields 4 servings.
