Soft Granola Bars

Ingredients

1 cup oil
2 cups oats
1 1/2 cups flour
1 teaspoon baking soda
1 cup raisins or cut up dates
1 1/2 teaspoons ground cloves and cinnamon
1/4 teaspoon salt
1/4 cup honey
2 tablespoons butter

Preparation

Heat oven to 350 degrees. Grease jelly roll pan 15 1/2" x 10 1/2" x 1".

Mix brown sugar, oil, eggs in large bowl with spoon until smooth. Stir in remaining ingredients, except honey and butter (for glaze). Spread in pan with spatula, patting the mixture evenly. Bake 17 to 22 minutes until set but not firm. Cool 15 minutes.

To make the honey glaze, heat 1/4 cup honey and 2 tablespoons butter in 1 quart pan over medium heat, stirring constantly until butter is melted and mixture is heated through. Drizzle evenly on top of granola. Cool completely and cut into bars.

Cover and store tightly for up to 2 weeks, or wrap and freeze for up to 6 months.
