Coconut Cookies

Ingredients

Butter for greasing pan
cup Atkins Bake Mix
cup shredded unsweetened coconut
cup coarsely-chopped hazelnuts
2 tablespoons seltzer
teaspoon coconut extract
8 tablespoons butter - (1 stick) softened

Preparation

Heat oven to 375 degrees. Generously butter a baking sheet.

In large bowl, combine bake mix, coconut, nuts, egg whites, seltzer, extract, butter and sugar substitute. Mix well.

Drop by rounded tablespoonsful on to prepared baking sheet. Bake 20 minutes, until light golden.

Cool cookies on baking sheet 1 minute before transferring to wire racks to cool completely.

This recipe yields 20 cookies.
