Healthy Tuna Salad

Ingredients

4 tablespoons chopped cilantro
1 stalk celery, finely diced
1/2 an apple, finely diced
1/4 cup lime juice
2 cups of arugula and spinach mix
2 Campari tomatoes, cut into sixths
3 radishes, finely sliced
10 slices cucumber

Preparation

Lightly toss the first six ingredients together, carefully so the tuna is still a bit chunky.

Mix the next four ingredients well (lime juice to ginger).

Toss the arugula, tomatoes, radishes and cucumbers. Divide into two servings, if you please. Scoop the tuna mix evenly over the salad portions.

Evenly pour the lime juice dressing over the tuna and salad portions.

Enjoy.
