PAIN PATATE (Haitian Sweet Potato Pudding)

Ingredients

4 cups sweet potato (2 lbs., preferably white sweet potatoes, a
8 tablespoons Unsalted butter, melted
1/2 teaspoon Salt
1 cup molasses
1 large ripe banana, mashed
1/2 cup sugar
1/2 cup raisins (optional)

Preparation

Peel the sweet potatoes, chop coarsely and grate in a blender, bit by bit, to medium consistency.

Put into a large mixing bowl, and add all the other ingredients, mixing thoroughly.

Pour into a greased, rectangular baking dish.

Bake in a 400F oven for about 45 minutes.

Serve at room temperature from the baking dish. It will be very dense and moist.
