Welsh Cookies

Ingredients

4 cups flour
1 cup sugar
1 cup shortening (a combination of butter, 2 eggs (plus milk to equal 1 cup)
1 teaspoon nutmeg
teaspoon salt
3 teaspoons baking powder
1 tablespoon vanilla or orange extract
box currants (DO NOT SUBSTITUTE

Cream shortening and sugar together. Put 2 eggs in 8 oz cup; add milk to fill.

Add to creamed mixture. Combine dry ingredients. Add to sugar, shortening, and egg mixture about a cup at a time. Add currants. Chill dough. (can be made a day or two before). Roll out in batches on cutting board. Use a combination of sugar and flour to roll dough. Cut with a round cookie cutter. Grill in an electric skillet set at 350 degrees F. When tops get shiny turn over, this takes about 6 minutes. Cool on wire rack. They freeze well.
