pounds fresh tomatoes (about 9 medium) to yield 7 cups finely diced |

ounce pkg Ball® Simple Creations® Mild Fiesta Salsa Mix |

pints Ball® Wide Mouth (16 oz) Glass Preserving Jars with Lids and Bands |

ounces can black beans, rinsed and drained |

cup chopped white onion (about 1 med) |

inch chipotle peppers adobo sauce, seeded and chopped |

tablespoons chopped fresh cilantro |

tablespoon adobo sauce |

tablespoon fresh lime juice |

Step 1 |
COMBINE tomatoes and contents of package in a medium saucepan. |
Step 2 |
HEAT to a boil. Reduce heat and simmer 5 minutes. Cool to room temperature, about 30 minutes. Reserve 2 cups salsa. Set aside. |
Step 3 |
LADLE remaining salsa into clean jars leaving 1/2 inch headspace. Apply lids. Label. Freeze up to 1 year. |
Step 4 |
COMBINE reserved salsa, corn, black beans, chipotle peppers, cilantro, adobo sauce and lime juice, stirring until well blended. Serve with tortilla chips. |
