ounces cans petite diced tomatoes

OR

3

pounds fresh tomatoes (about 9 medium) to yield 7 cups finely diced

1

ounce pkg Ball® Simple Creations® Mild Fiesta Salsa Mix

3

pints Ball® Wide Mouth (16 oz) Glass Preserving Jars with Lids and Bands

15

ounces can whole kernel sweet corn, drained

15

ounces can black beans, rinsed and drained

½

cup chopped white onion (about 1 med)

2

inch chipotle peppers adobo sauce, seeded and chopped

3

tablespoons chopped fresh cilantro

1

tablespoon adobo sauce

1

tablespoon fresh lime juice

Step 1

COMBINE tomatoes and contents of package in a medium saucepan.

Step 2

HEAT to a boil. Reduce heat and simmer 5 minutes. Cool to room temperature, about 30 minutes. Reserve 2 cups salsa. Set aside.

Step 3

LADLE remaining salsa into clean jars leaving 1/2 inch headspace. Apply lids. Label. Freeze up to 1 year.

Step 4

COMBINE reserved salsa, corn, black beans, chipotle peppers, cilantro, adobo sauce and lime juice, stirring until well blended. Serve with tortilla chips.
