cup smooth peanut butter

1 ½

cups chicken stock

¼

cup sherry

3

garlic cloves minced

1

teaspoon soy sauce

2

teaspoons lemon juice

1

teaspoon brown sugar

1

dsh Tabasco sauce

Salt to taste

Freshly-ground pepper to taste

Step 1

In a medium saucepan, combine all ingredients to blend. Cook over medium heat until mixture reaches a boil. Reduce heat to low and cook for 5 minutes, stirring frequently.

Step 2

This recipe yields about 3 cups.

Step 3

Comments: Use this sauce as an accompaniment to barbecued chicken. You might try to find all-natural or fresh-ground peanut butter instead of the hydrdogenated variety found in most supermarkets. There is a surprising difference in taste and texture. The less processed peanut butters have a richer flavor.
