Sadel's Sweet Noodle Pudding (Kugel)

Ingredients

1 cup sugar
1 teaspoon vanilla
1/2 pound Butter
1 pound Wide egg noodles
Cornflake crumbs
1 pint sour cream
1 pound Pot cheese

Preparation

Cook the noodles in salted boiling water al dente.

Separate eggs and mix the yolks with ½ cup sugar.

Add sour cream, lemon juice and vanilla.

In a separate bowl, beat egg whites until frothy and add the remaining sugar to the whites.

Drain the cooked noodles and stir in ¼ lb. Butter and the pot cheese.

Stir in the egg yolks and fold in the egg whites.

Optional: stir in raisins or fruit.

Line the baking pan with crushed cornflakes, then add the noodle mixture, and top with more cornflakes and ½ lb. Butter pats on top.

Bake at 350F until top is golden brown.
