Honey-Roasted Chicken

Ingredients

1 teaspoon freshly-ground black pepper
1 teaspoon salt
1 tablespoon sugar
1 teaspoon sesame oil
3 tablespoons honey
2 tablespoons sweet soy sauce
1 tablespoon lime juice
1 tablespoon annatto seed oil
1 teaspoon sesame oil
1 teaspoon freshly-ground black pepper
1 teaspoon salt
1 tablespoon sugar
1 teaspoon sesame oil

Preparation

Combine all the Marinade I ingredients. Rub into the inside of the chicken and close with a needle or a bamboo stick. Marinate for 1 hour.

Set chicken in a baking pan. Combine Marinade II ingredients. Pour over chicken. Place in oven at 375 degrees.

Mix the Marinade III ingredients. Baste the chicken with this marinade every 10 to 15 minutes. Bake until skin is a golden brown and chicken is well cooked.

Cut up the chicken and assemble on a serving platter. Serve with deep-fried sweet buns or steamed sticky rice.

Comments:This recipe works well with any type of fowl or game. Since considerable time is involved with the marinades and cooking, it is probably best suited for a large bird and special occasion.
