Yellow Hot Sauce

Ingredients

10 yellow hot peppers (seeded, and diced), 3 yellow onions, 1 (medium-large)

Preparation

Place a pot over medium-heat. Add margarine, and heat. Add peppers, and onions, and saute just until soft. Add in as much tomato paste as needed to thickened. Season with salt, and pepper. Bring to simmer. Reduce heat to low. Cover, and simmer until thickened, for about 2 hours. Remove from heat, and set aside to cool. Transfer sauce into clean small glass-jars with lids. Seal, and place in refrigerator. Serve with any Poultry meat, or other dishes, as desired.
