Yield: 8 servings

tablespoons Olive Oil

1 ½

cups Onions, finely chopped

tablespoons Garlic, finely chopped

1

ounce can Tomatoes, crushed, 28

ounce can Tomato Paste, 6

½

cup Red Wine Vinegar

¼

cup Worcestershire Sauce

1

tablespoon Chili Powder

1

tablespoon Coriander, ground

3

tablespoons Lemon Juice

¼

teaspoon Red Pepper Flakes

1

tablespoon Tabasco Sauce

2

tablespoons tbl Oregano fresh or 1 dried

2

teaspoons Cumin, ground

2

Bay Leaves

4

teaspoons x Thyme sprig fresh or 1 dry

1

teaspoon Black Pepper, freshly ground

4

tablespoons Honey

1

Salt

Step 1

Servings: 8

Step 2

Heat the oil in a saucepan and add the onions. Cook, stirring until wilted.

Step 3

Add the garlic, cook briefly and add the remaining ingredients. Bring to a simmer and cook, stirring often, about 30 minutes. Let the sauce cool and use for basting. Refrigerates well.

Step 4

Makes 5 cups.
